RV Game Day Recipe: Cowboy Casserole

Fall means the end of hot summer days, the start of cold fall nights and for some the beginning of football season. Which also means it’s tailgating time! Here is a favorite camping recipe that is easy to make and is sure to warm you up on game days.


Cowboy Casserole


1 lb ground beef

½ lb bacon

1 sm onion- chopped

2 (15oz) cans baked beans with pork

1/3 cup favorite barbeque sauce

1 pkg (7.5 oz) of biscuit dough


In a skillet or Dutch oven, cook bacon over medium heat until cooked. Drain and cut into small pieces, set aside.

Add onion and beef to the skillet and cook until meat is brown and onions are tender.

Stir the bacon pieces, baked beans and barbeque sauce into the beef. Bring to a boil.

Reduce heat to low and place a single layer of uncooked biscuits on top of mixture. Cover and simmer for about ten minutes or until biscuits are done.

Place 2 biscuits on a plate and spoon the mixture over top and enjoy!
